Lori's Fabulous Roast Turkey
We want you to have the chance to taste how good the meals you provide really are! So here is a recipe for Lori’s Fabulous Roast Turkey. She and her team will be making over 100 turkeys for our feast. Trust me, they will all get eaten.
Our God is a God of abundance, and we want to show His love and generosity to our hurting neighbors. That’s why it’s our #1 goal that no one walks away hungry. Especially because the main reason people come to the Mission for the first time is to ease their hunger.
Starting with a completely thawed or fresh turkey, unwrap and remove the bag of innards. Wash the turkey thoroughly inside the cavity and outside. Set aside.
Pre-heat the oven to 400 degrees.
Prepare celery and onions to place underneath the turkey if you don't have a roasting rack to stuff in the cavity.
Depending on the size of the onions, cut into 6-8 wedges after peeling off the outer skin. Separate the celery and wash the stalks, cut into 3-4" pieces.
In your roasting pan, either place the roasting rack or a combination of the onions and celery in the bottom of the pan or both, then place the turkey, breast side up in the pan, patting it dry with paper towels. In the cavity, season with salt, pepper and granulated garlic, stuff with celery and onions.
On the outside of the turkey, rub olive oil on the breast, legs and thighs and season liberally with salt, pepper and granulated garlic. Place in the oven uncovered for 1 hour.
After the first hour, turn the oven temp to 350 degrees, tent with aluminium foil and continue to cook until the internal temperature of the thigh meat is 180 degrees.
Pull from the oven, let rest for 30 minutes or more until carving time.
Use the drippings to make a delicious turkey gravy.
